Picnic Mashed Potatoes - cooking recipe
Ingredients

8 medium potatoes, peeled and cubed
1/2 stick butter or margarine
8 oz. cream cheese
1/4 c. sour cream
paprika for garnish (optional)
salt and pepper
Preparation

Preheat oven to 350\u00b0.
In a large, heavy saucepan, place potatoes in just enough water to cover them.
Bring water to a boil over medium-high heat.
Cover saucepan loosely.
Reduce heat to medium.
Cook until potatoes are soft.
Drain potatoes.
Add butter or margarine, cream cheese and sour cream.
Beat on high speed mixer until smooth.
Salt and pepper to taste.
Beat 2 minutes more.
Transfer potatoes into a medium baking dish.
Bake at 350\u00b0 for 20 minutes.
Remove from oven.
Sprinkle lightly with paprika.
Serve hot or cold.
