Blueberry Thrill Muffins - cooking recipe
Ingredients

2 1/4 c. flour
1 Tbsp. baking powder
1 1/2 tsp. salt
2 large eggs
1/2 c. plus 2 Tbsp. sugar
1/2 c. melted Crisco
1/2 c. milk
1 1/2 c. blueberries
Preparation

Preheat oven to 400\u00b0.
Grease 18 muffin pan cups.
Sift dry ingredients in bowl.
Combine egg, sugar, melted shortening and milk; whisk until smooth.
Stir dry ingredients into egg mixture with rubber spatula just until combined.
Fold in 1 1/2 cups blueberries; spoon batter into prepared muffin cups.
Bake for 15 to 20 minutes, until toothpick inserted in center of muffin comes out clean.
Immediately remove muffins from cups.
Serve warm. Makes 1 1/2 dozen.
