Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant or 2 small, peeled, diced and cooked
    1 onion, diced
    1 bell pepper, diced
    1 jalapeno, grated
    1 small jar pimento
    1 c. cracker crumbs
    1 egg
    1 Tbsp. sugar
    1 tsp. pepper
    1/2 tsp. salt
    1 can cream of mushroom soup
Preparation
    Eggplant can be cooked in chunks or diced. After cooking, drain well to remove excess water. Saut onion, bell pepper and jalapeno pepper in 1 tablespoon oil until tender, not brown. Mix all ingredients together well. Place in casserole and top with 1/2 cup grated cheese and 1 slice of bacon, cut into pieces. Bake at 350\u00b0 for 30 to 40 minutes.
