Rice And Green Chilies - cooking recipe

Ingredients
    1/4 c. butter
    4 c. cooked rice
    1 c. Ricotta cheese (substitute cottage cheese if necessary)
    3 (4 oz.) cans whole chilies
    1 c. chopped onion
    2 c. sour cream
    salt and pepper to taste
    2 c. grated Cheddar cheese
    chopped parsley
Preparation
    Preheat oven to 375\u00b0.
    Bake in 12 x 8 x 2-inch casserole. Melt butter in large skillet.
    Saute onion, remove from heat and stir in rice, sour cream and Ricotta.
    Salt and pepper to taste. Toss lightly.
    Drain and halve
    chili peppers.
    In casserole layer rice mixture, chilies and cheese.
    Repeat this to form 2 layers. Bake 25 minutes uncovered, until bubbly.
