Eggplant Casserole - cooking recipe

Ingredients
    2 c. eggplant
    1 c. chopped tomatoes
    1/2 c. chopped onions
    1/2 c. shredded Cheddar cheese
    1/2 c. butter
    1/2 c. bread crumbs
    salt and pepper to taste
Preparation
    Parboil eggplant until tender.
    Layer with remaining ingredients.
    Melt 1/2 cup butter and mix with bread crumbs. Place on top of layered ingredients.
    Bake about 20 minutes in 350\u00b0 oven.
