Corn And Zucchini Casserole - cooking recipe
Ingredients

5 to 6 small zucchini
1 c. water
1/2 tsp. salt
1 green pepper, finely chopped
1 1/2 c. chopped onion
1 clove garlic, minced
1/2 c. butter
1 c. whole kernel corn
5 eggs
2 c. shredded sharp Cheddar cheese
Preparation

Place zucchini, water and salt in covered pan; steam about 10 minutes, until tender.
Drain and chop or grind zucchini.
Saute pepper, onion and garlic in 2 tablespoons butter or margarine until onion is transparent.
Add zucchini, remaining butter, corn, cheese and eggs.
Mix well and pour into a casserole dish.
Bake, uncovered, at 350\u00b0 for 60 to 75 minutes.
