Cheesy Eggplant - cooking recipe

Ingredients
    1/2 c. oleo
    1 eggplant, peeled and cubed
    4 tomatoes, chopped
    1 c. shredded Cheddar cheese
Preparation
    Melt butter in skillet.
    Add eggplant cubes and toss to coat. Saute until tender.
    Place in a 9 x 9-inch baking dish.
    Arrange tomatoes on top and sprinkle with cheese.
    Bake in a 350\u00b0 oven for 30 minutes.
