Macaroon Pie(3 Pies) - cooking recipe

1 1/2 c. saltine cracker crumbs
8 oz. chopped dates
1 1/2 c. chopped pecans
2 1/2 c. sugar
1/2 tsp. almond flavoring
1 1/2 c. egg whites
Preparation

Roll crackers to make crumbs.
Chop dates and mix with crumbs. Beat egg whites until very stiff, as for a meringue.
Carefully fold in remaining ingredients with wooden spoon but be sure to blend thoroughly.
Divide into three 9-inch pie tins and bake 30 minutes at 375\u00b0.
Use whipped cream topping if desired.
