Baked Stuffed Sweet Potatoes - cooking recipe
Ingredients

4 large sweet potatoes, washed and pierced
2 stalks broccoli, stems peeled, flowers and stalks cut into small pieces
2 scallions, trimmed and finely chopped
1/2 c. grated part skim Mozzarella cheese
salt and freshly ground black pepper to taste
Preparation

Set oven to 375\u00b0.
Bake the potatoes for 1 hour or until they are tender when pierced with a fork.
