Arkansas Chicken And Rice - cooking recipe
Ingredients

Pam baking spray or 1 Tbsp. margarine
2 Tbsp. butter
2 Tbsp. chopped bell pepper
2 Tbsp. chopped onion
2 c. cooked bite size chicken pieces
6 oz. wild rice, cooked
1/2 c. mayonnaise
1 (16 oz.) can French-style green beans
1 can cream of mushroom soup
1/2 c. sliced water chestnuts
freshly ground black pepper
juice of one lemon
1/4 tsp. salt
1 c. shredded Cheddar cheese
Preparation

Spread 2-quart casserole with baking spray.
Preheat oven to 350\u00b0.
In a large skillet melt 2 tablespoons butter and saute green pepper and onion.
Place in large bowl; add cooked chicken, cooked rice, green beans, mayonnaise, celery soup, chestnuts, salt, pepper and lemon juice.
Stir well and pour into prepared casserole.
Bake at 350\u00b0 for 25 to 30 minutes.
Top with cheese and bake 5 minutes, until melted.
