Stir-Fry Beef And Vegetables - cooking recipe

Ingredients
    1 lb. lean beef, thinly sliced across the grain
    1/2 c. soy sauce
    1/4 c. sherry
    1 c. mild onions, thinly sliced
    1 c. celery, sliced diagonally
    2 c. broccoli flowerets
    2 c. broccoli stems, peeled and thinly sliced
    12 medium mushrooms, sliced
    1/4 c. peanut or vegetable oil
    2 small cloves garlic, minced or pressed
    1 Tbsp. cornstarch
    1 medium tomato, peeled and diced (for garnish, optional)
Preparation
    Toss beef in a bowl with soy sauce and sherry.
    Cover and marinate for 30 minutes.
    Prepare vegetables.
    Set aside.
