Flaky Oil Pie Pastry - cooking recipe
Ingredients

2 1/3 c. flour
1 tsp. salt
1/2 c. + 1 Tbsp. oil
Preparation

In medium bowl, mix with fork all ingredients until texture of coarse crumbs.
Sprinkle 3 to 4 tablespoons of cold water, 1 tablespoon at a time, into flour mixture.
Mix lightly with fork after each addition until pastry is moist.
Divide pastry evenly. Dampen countertop with water.
Place piece of waxed paper, about 12 square-inches, on surface.
Put half of dough on this.
Cover with a second piece of waxed paper.
Roll out dough until about 1-inch larger in circumference than pie pan.
Remove top waxed paper. Place pie pan face down on dough.
Quickly flip dough over by grasping bottom waxed paper, 1 hand opposite the other.
Slowly peel off waxed paper and ease crust into pan.
Crust will break easily but it also patches easy and doesn't show like normal crusts.
Repeat rolling technique for top crust.
Peel off top paper, then carefully flip top crust onto pie.
Be sure to seal crusts well with prongs of fork.
