Pork And Rice Chinese Style - cooking recipe

Ingredients
    2 c. diced cooked pork
    6 Tbsp. pork drippings
    5 Tbsp. chopped green onions
    1 (2 oz.) can mushrooms
    3 medium peeled tomatoes
    3 c. cooked rice
    1 green pepper, diced finely
    5 Tbsp. soy sauce
    4 eggs, lightly beaten
Preparation
    Cook pork and rice in oil at moderate temperature, stirring constantly until heated through, about 5 minutes.
    Add green pepper and green onions, stir and cook 10 minutes.
    Add soy sauce and mix carefully.
    Drain mushrooms, add with beaten eggs.
    Cook slowly, stirring until eggs are cooked.
    Cut tomatoes into strips, fold into mixture and cook for about 1 minute longer.
