Chicken And Broccoli Quiche - cooking recipe

1 medium onion, chopped
1 tsp. vegetable oil
1 c. cooked chicken (1 to 2 chicken breasts)
1 c. shredded Swiss cheese
1 c. milk
2/3 c. Bisquick or Jiffy mix
1/4 tsp. pepper
1/2 tsp. salt (optional)
1 (10 oz.) pkg. frozen chopped broccoli, thawed or 1 medium head fresh broccoli, cooked
2 eggs
1 tsp. yellow or Dijon mustard
1/2 tsp. thyme
1/2 c. mushrooms (optional)
Preparation

Preheat oven to 400\u00b0.
Spray 9-inch pie plate with Pam.
Saute onion (and mushrooms) in nonstick skillet, until tender (I cook the chicken at the same time).
Combine broccoli, chicken, cheese and onion (and mushrooms) and spread evenly over the bottom of the pie plate.
In blender or food processor, blend Bisquick, eggs, milk, mustard, thyme, pepper (and salt).
Pour over chicken mixture. Bake in 400\u00b0 oven 30 to 35 minutes, until browned on top and knife inserted in center comes out clean.
Cool 5 minutes.
Serves 6.
