Sunshine Carrots - cooking recipe

Ingredients
    4 c. carrots, sliced 1-inch thick
    2 small oranges, peeled and diced (reserve 1/2 c. juice)
    1/4 tsp. salt
    1/4 tsp. ginger
    4 tsp. diet or imitation margarine
Preparation
    Cook carrots in boiling water until tender, 15 to 20 minutes. Combine orange juice, salt and ginger in small pan.
    Boil 1 minute.
    Stir in diced oranges.
    Pour over hot carrots; toss to coat.
    Remove from heat; add 1 teaspoon margarine to each serving.
