Cranberry Meat Loaf(Serves 6) - cooking recipe
Ingredients

2 Tbsp. light brown sugar
1 1/2 c. whole cranberry sauce
1 c. cold water
1 1/2 c. stuffing mix
1/2 medium onion, finely chopped
1/2 green pepper, chopped
1 egg, beaten
1 tsp. salt
1 lb. lean ground beef or turkey
parsley flakes
corn flake crumbs
Preparation

Oil a 9 x 5-inch loaf pan.
Sprinkle bottom with brown sugar and spread with cranberry sauce.
In large bowl, pour cold water over stuffing mix and toss with fork.
Add onion, green pepper, egg, salt and ground meat to stuffing and mix well.
Spoon gently over cranberry sauce in pan.
(Do not pack down, but spread out to all corners, sealing in cranberries.)
