Flaming Cheese (Saganaki) - cooking recipe

Ingredients
    1/2 lb. Kasseri or Kefalotiri cheese (may also substitute Mozzarella cheese)
    1 Tbsp. margarine or butter, melted
    2 Tbsp. brandy
    1/2 lemon
    cocktail rye bread or assorted crackers
Preparation
    Cut cheese in 3 wedges; place in shallow serving dish.
    Brush cheese with butter.
    Set oven to broil and/or 550\u00b0.
    Broil with top 4 to 6 inches from heat until cheese is brown and bubbly (5 to 6 minutes).
    Heat brandy until warm; pour over cheese and light immediately.
    Squeeze lemon over cheese.
    Serve warm.
    Serves 6.
