Spanish Style Chicken - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 cloves garlic, peeled and smashed
    1 large onion, thinly sliced
    1 sweet red pepper, thinly sliced
    2 chicken breasts
    2 Tbsp. flour
    1/4 c. dry sherry
    1/2 c. chicken broth
    1/4 tsp. crushed dried thyme
    white pepper
Preparation
    Heat oil in large skillet.
    Add garlic, onion and sweet pepper and saute until veggies are limp, about 5 minutes.
    Push veggies aside.
    Dust chicken with flour and add to skillet.
    Brown 5 minutes per side over medium heat.
    Remove chicken and set aside. Add sherry and scrape up any browned bits from skillet.
    Add chicken broth and thyme.
    Return chicken to skillet.
    Cover and simmer until chicken is cooked through, about 20 minutes.
    Season to taste with salt and pepper.
    Makes 2 servings.
