Ingredients

2/3 c. Minute rice
1/3 c. sugar
1/3 c. raisins (I add more)
2 eggs
1/4 tsp. nutmeg
2 3/4 c. milk
1/2 tsp. salt
1 tsp. vanilla
Preparation

Combine rice, milk, sugar, salt and raisins in saucepan. Bring to boil, stirring frequently.
Reduce heat; simmer 10 minutes.
Mix 2 slightly beaten eggs, vanilla and nutmeg in 1 quart casserole.
Stir in rice mixture; mix well.
Place in pan of hot water.
Bake at 375\u00b0 for 20 to 30 minutes or until center is set.
Cool 1 hour before serving.
Serves 6 to 8.
