Grandma Lena Holland'S Canned Apple Pie Filling - cooking recipe

Ingredients
    2 1/2 c. sugar
    2 c. brown sugar
    1 c. cornstarch
    1 1/2 tsp. salt
    1 tsp. cinnamon
    1 tsp. nutmeg
    2 1/2 qt. water
    2 Tbsp. lemon juice
    6 qt. sliced peeled apples (7 1/4 lb.)
Preparation
    Mix sugars, cornstarch, salt, cinnamon and nutmeg in a cast-iron Dutch oven.
    Stir in water.
    Heat to boiling, stirring often.
    Set on cooler part of wood stove.
    Cook, stirring until thick, about 5 minutes.
    Stir in juice.
    Pack into jars 1/3 full with apple slices.
    Pour in liquid until it covers apples.
    Remove air bubbles.
    Fill within 1-inch of top of jars and seal.
    Cook in water bath for 20 minutes.
    Makes about 6 quarts.
