Scalloped Carrots - cooking recipe

Ingredients
    2 lb. carrots, peeled and ends trimmed
    1 small chopped onion
    1 small diced bell pepper
    1 (16 oz.) pkg. Velveeta cheese
Preparation
    Boil carrots until tender.
    Carefully cut in half, lengthwise and depulp the center of each carrot half.
    Arrange carrots in 13 x 9-inch pan.
    Saute onion and pepper until tender.
    Add chopped carrot pulp and pour over carrots.
    Melt cheese and pour over carrots.
    Bake at 350\u00b0 until browned and bubbly.
