Vidalia Onion Rings - cooking recipe

Ingredients
    2 large Vidalia onions
    2 1/4 c. all-purpose flour, divided
    1 1/4 tsp. baking powder
    1 1/4 tsp. salt
    1/4 tsp. white pepper
    2 c. buttermilk
    1 1/2 Tbsp. vegetable oil
    2 eggs, separated
    vegetable oil (for frying)
Preparation
    Peel onions, cut into 1/2-inch slices and separate into rings. Place in a large Ziploc bag (or paper sack) with 1 cup flour. Shake until rings are coated.
