Pastry Squares - cooking recipe
Ingredients

3 Tbsp. cornstarch
2 Tbsp. cold water
1 c. shortening
1 1/2 c. sugar
2 1/2 c. flour
2 eggs
1/4 c. lemon juice
grated rind of 1 lemon
2 c. shredded coconut
2 Tbsp. melted butter
1 qt. applesauce
Preparation

Combine shortening, 1 cup of sugar and flour.
Mix until crumbly and press into pan.
Bake at 350\u00b0 for 20 to 25 minutes. Mix cornstarch and water with applesauce, lemon juice and rind. Simmer slowly for 5 minutes.
Beat eggs, remaining sugar and melted butter.
Stir into cooked cornstarch mixture.
Remove from heat.
Add coconut and blend well.
Spread over baked pastry. Then bake at 350\u00b0 for 15 minutes.
Chill before serving.
Makes 18 to 20 squares.
