Peanutty Sweet Potatoes - cooking recipe

Ingredients
    4 baked sweet potatoes (small to medium-size, 2-inches to 5-inches)
    2 Tbsp. crunchy peanut butter
    1/3 c. skim milk
    1/2 tsp. cinnamon
    1/4 tsp. salt
Preparation
    Cut baked sweet potatoes in half and spoon out the majority of the potato.
    Leave the shells in place.
    Mash potato pulp thoroughly until smooth.
    Add peanut butter, milk and seasonings. Beat until well mixed and fluffy.
    Refill shells with mixture and broil slightly before serving.
