Green Tomato Relish - cooking recipe

Ingredients
    1 peck (12 lb.) green tomatoes
    8 onions
    10 bell peppers
    3 Tbsp. salt
    6 hot peppers, chopped
    1 qt. vinegar
    1 Tbsp. cinnamon
    1 Tbsp. allspice
    1/4 tsp. cloves
    3 Tbsp. dry mustard
    1 3/4 c. sugar
Preparation
    Chop tomatoes, onions and peppers together. Cover with salt and allow to stand overnight.
    Drain.
    Add hot peppers, vinegar, spices (tied in cheesecloth) and sugar.
    Boil until tender (approximately 15 minutes).
    Pack in pint jars.
    Process in boiling water for 10 minutes.
