Broccoli And Rice Casserole - cooking recipe

Ingredients
    1 bunch fresh or 1 pkg. frozen broccoli
    1/2 c. chopped onion
    2 Tbsp. margarine or butter
    1 can cream of mushroom soup
    1/2 c. milk
    1 lb. light Velveeta cheese, chopped
    1 1/2 to 2 c. cooked rice
Preparation
    Cook broccoli according to package; drain.
    Saute onion in margarine in skillet.
    Add soup, milk and cheese.
    Mix well. Simmer for several minutes, stirring constantly.
    Combine broccoli, sauce and rice in 9 x 9-inch baking dish.
    Bake at 350\u00b0 for 45 minutes.
    This can easily be doubled.
    I do not double the cheese, though.
