Green Bean, Walnut And Feta Salad - cooking recipe

Ingredients
    1 1/2 lb. fresh green beans, ends trimmed and cut in crosswise pieces
    3/4 c. olive oil
    1/2 c. chopped parsley or fresh mint leaves
    1/4 c. white wine vinegar
    1/2 tsp. minced garlic
    3/4 tsp. salt
    1/4 tsp. freshly ground pepper
    1 c. chopped toasted walnuts
    1 c. diced red onion
    1 c. crumbled Feta cheese
Preparation
    Drop beans into large pot of boiling water; cook until crisp-tender, about 5 to 6 minutes.
    Drain and rinse with cold water to stop the cooking process.
    Pat dry with paper towels. Combine oil, parsley, vinegar, salt, garlic and pepper; blend well.
    Arrange beans in shallow serving dish.
    Sprinkle with nuts, onion and Feta.
    Just before serving, pour dressing over and toss thoroughly.
    Serves 6.
