Ambrosia Mold - cooking recipe

Ingredients
    1 small can crushed pineapple (undrained)
    2 c. boiling water
    1 (8 serving) pkg. or 2 (4 serving) pkg. Jell-O orange, sugar-free gelatin
    1 3/4 c. thawed Cool Whip (lite)
    1 (11 oz.) can mandarin orange segments, drained
    1 c. miniature marshmallows
    1/2 c. coconut (optional)
Preparation
    Drain pineapple, reserving juice.
    Add cold water to the juice to measure 1 cup.
    Stir boiling water into gelatin in a large bowl until completely dissolved.
    Stir in measured liquid.
    Refrigerate about 1 1/4 hours or until slightly thickened.
    Stir in whipped topping with wire whisk until smooth; refrigerate 10 minutes or until mixture will mound.
    Stir in rest of ingredients.
    Spoon into a 6-cup mold.
    Refrigerate 4 hours or until firm.
    Makes 10 servings.
