Penne With Artichokes - cooking recipe

Ingredients
    2 small globe artichokes
    1 tsp. lemon juice
    1 garlic clove
    2 Tbsp. olive oil
    1 Tbsp. chopped parsley
    1/2 lb. penne pasta
    salt and pepper
Preparation
    Cut off stems, tough outer leaves and pointed tops of artichokes and snip off the tips of the outside leaves.
    Cut artichokes into quarters; remove chokes and place in bowl with lemon juice.
    Cover with water and leave to soak for 10 minutes. Peel and crush garlic.
    Heat the oil in saucepan.
    Drain artichokes and add to pan with garlic.
    Cook gently over low heat for about 10 minutes, until tender, turning them several times. Add parsley and cook for a further 4 minutes, stirring occasionally.
