Cauliflower Salad(Cavolfiore Insalata) - cooking recipe

Ingredients
    1 small head cauliflower
    2 c. water
    1/2 tsp. salt
    6 sprigs fresh parsley, minced
    1/4 c. wine vinegar
    1/4 c. olive oil
    fresh ground pepper
    1/4 tsp. garlic, minced
Preparation
    Rinse and core
    cauliflower.
    Cut
    into
    flowerets; set aside. Bring a medium saucepan
    of
    water to boil, adding 1/4 teaspoon of the salt.
    Boil
    cauliflower for 5 minutes; drain. Let cauliflower cool completely
    in
    colander.
    In shaker jar, mix rest of ingredients.
    Pour
    onto
    cooled
    cauliflower
    and toss gently.
    Let marinate 30 minutes.
    Serve at room temperature or chilled.
    Makes 4 to 6 servings.
