Old English Cheese Soup(Serves 4 To 6) - cooking recipe
Ingredients

3/4 c. butter
1/2 c. finely chopped celery
1/2 c. finely chopped carrot
1/2 c. finely chopped onion
1/2 c. finely chopped green pepper
6 Tbsp. flour
4 c. milk
1 tsp. salt
2 c. shredded sharp American cheese
2 c. clear chicken broth
Preparation

Melt 1/4 cup butter in a skillet; add vegetables and saute until crisp-tender.
Set aside.
Melt 1/2 cup butter in a Dutch oven over low heat.
Gradually stir in flour; cook, stirring constantly, until bubbly.
Gradually stir in milk; cook, stirring constantly, until mixture is smooth and thickened.
Add sauteed vegetables, salt, cheese and broth; cook, stirring frequently, until cheese is melted and mixture is well heated.
