Highland Pot Roast - cooking recipe
Ingredients

2 lb. rump beef (1 piece)
2 Tbsp. shortening
8 small potatoes, peeled
2 stalks celery, cut in 2-inch pieces
4 medium carrots, quartered lengthwise
1 Tbsp. salt
1/4 tsp. pepper
16 dried apricots, washed
1 c. sliced mushrooms
1 c. catsup
Preparation

Heat oven to 325\u00b0.
Brown beef in shortening in Dutch oven on medium heat.
Arrange vegetables around meat.
Sprinkle with salt and pepper.
Top meat with apricots and mushrooms.
Pour catsup over all; cover.
Bake 2 hours or until meat and vegetables are tender.
Add a little water if a thinner gravy is desired. Makes 8 servings.
