Sweet Potato Surprise - cooking recipe

Ingredients
    1 lb. can sweet potatoes, drained
    1 1/4 c. brown sugar
    1 1/2 Tbsp. cornstarch
    1/4 tsp. salt
    1/8 tsp. cinnamon
    1 tsp. orange juice concentrate or grated orange
    1 lb. can apricot halves
    2 Tbsp. butter
    1/4 c. pecan halves
Preparation
    Place potatoes in greased casserole dish.
    In a saucepan, combine brown sugar, cornstarch, salt, cinnamon, orange and 1 cup apricot juice drained from apricots.
    Then cook mixture over medium heat until boiling for 2 minutes.
    Add apricots, butter and pecans.
    Pour total mixture over sweet potatoes.
    Bake, uncovered, at 375\u00b0 for 25 minutes.
