Pineapple-Cheese Boats - cooking recipe

Ingredients
    1 pineapple
    1 c. strawberries, halved
    2 c. cantaloupe or honeydew balls
    1/4 tsp. ground ginger
    2 Tbsp. lime juice
    3 Tbsp. chopped almonds
    1/4 tsp. ground ginger
    8 oz. strawberry-banana yogurt
    8 oz. reduced fat Cheddar, cut in small cubes
Preparation
    Select a pineapple with fresh leaves. Cut lengthwise into quarters through green top. Cut off core. Remove fruit from outside skin. Cut fruit into chunks. Save outside skin to use as \"boats.\"
    Drain fruit and invert shells to drain.
    Place pineapple chunks, halved strawberries and melon balls in bowl. Sprinkle with 1/4 teaspoon ginger and lime juice.
    Toss. Cover and refrigerate 1 hour.
    Stir in cheese. Spoon mixture into shells.
    Sprinkle with almonds and ginger.
    Spoon yogurt on top.
    Yields 4 servings.
