Swedish Shrimp - cooking recipe

Ingredients
    2 green onions, thinly sliced
    1 tsp. vegetable oil
    1 c. chicken broth
    1 lb. shrimp, shelled and deveined
    2 Tbsp. sour cream
    2 Tbsp. Dijon-style mustard
    1 tsp. cornstarch
    1/8 tsp. pepper
    1/4 c. chopped fresh dill
    1/2 tsp. fresh lemon juice
Preparation
    Saute onion in oil in non-stick skillet to soften; 2 minutes. Add 3/4 cup broth; bring to boiling.
    Add shrimp; reduce heat. Simmer, covered, until shrimp are pink; 3 minutes.
    Whisk together 1/4 cup broth, sour cream, mustard and cornstarch in cup until smooth.
    Whisk into the skillet.
    Cook, stirring to thicken.
    Add pepper, dill and lemon juice.
    Serve over rice and peas.
    Makes 4 servings.
