Apricot Salad - cooking recipe

Ingredients
    2 Tbsp. gelatin
    3 c. apricot nectar
    1/4 c. fresh lemon juice
    4 c. diced fresh fruits, well drained (Bartlett pears, grapes, bananas, Bing cherries, peaches, blueberries, etc.)
    grated rind of 2 lemons
Preparation
    Sprinkle gelatin over 1/2 cup cold nectar. Heat remaining nectar. Pour over gelatin. Stir in lemon juice. Cool until mixture thickens. Place fruits in mold or pan. Fill with gelatin-nectar mixture. Poppy seed dressing is great with it!
