Hoppin' John - cooking recipe

Ingredients
    3 to 4 strips streak-of-lean or 3 strips bacon
    2 c. cooked or 16 oz. can black-eyed peas, drained
    1 c. canned tomatoes
    1 c. cooked rice
    1 medium onion, diced
    1/4 c. diced green pepper (optional)
    salt and pepper to taste
Preparation
    Fry out meat; save drippings.
    Crumble meat and set aside. Pour fat into casserole dish.
    Add peas, tomatoes, rice, onion, green pepper, salt and pepper; mix.
    Bake at 350\u00b0 for 35 to 45 minutes.
    Crumble reserved meat over top and serve.
    Yield: 8 to 10 servings.
