Red Potato Salad In Sour Cream Vinaigrette - cooking recipe

Ingredients
    2 1/2 lb. small red potatoes
    3 Tbsp. red wine vinegar, divided use
    1/2 c. sour cream
    1/2 c. mayonnaise
    4 Tbsp. vegetable oil
    1 Tbsp. Dijon-style mustard
    1 large clove garlic, peeled and mashed
    1 green bell pepper, diced
    4 Tbsp. minced scallions
    3 small gherkins, diced or sweet pickles
    1/2 c. red pepper, diced or pimentos
Preparation
    Cook potatoes until just tender.
    When cool, cut in large pieces.
    Sprinkle with 2 tablespoons vinegar and 4 tablespoons oil.
    Toss lightly and set aside.
