Godfather'S Spaghetti Sauce With Italian Sausage And Red Wine - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 Tbsp. minced garlic
    1 onion, finely chopped
    1 c. strong red wine
    1 (28 oz.) can whole Italian tomatoes
    1 (6 oz.) can tomato paste
    1 Tbsp. sweet basil
    salt and sugar to taste
    1 1/2 lb. mild Italian sausage (hot if desired)
Preparation
    In a large pot, heat oil over low heat, add garlic and onion and cook until translucent.
    Stir in wine.
    Add tomatoes and paste (rinse can with water and add to pot).
    Add basil, salt and sugar to taste and stir.
    When sauce comes to light boil, add sausage (uncooked) and simmer over low heat for 3 to 4 hours, stirring occasionally and adding water if sauce gets too thick.
    Correct seasonings in last hour and partly cover pot.
    Serve over spaghetti and drink the rest of the wine.
    Flavor improves if refrigerated overnight.
    Serves 4 to 5.
