Creamy Potato Bisque - cooking recipe

Ingredients
    6 Tbsp. butter or margarine
    2 large onions, chopped
    1 1/2 c. celery, chopped
    4 c. peeled, diced potatoes (8 potatoes)
    1/2 to 1 tsp. salt
    1 tsp. pepper
    4 c. chicken broth
    4 c. milk
    1/2 c. parsley
    2 to 3 Tbsp. cornstarch
Preparation
    In large pot, melt butter or margarine.
    Add onions and celery and cook until soft.
    Add potatoes, parsley, salt, pepper and broth.
    Bring to boil.
    Reduce heat.
    Cover and simmer until potatoes are tender (about 30 minutes).
    Stir in milk and heat. Add 2 to 3 tablespoons of cornstarch for desired consistency of bisque.
    Cook and stir until soup thickens.
    Do not boil.
    Season with salt and pepper to desired taste.
