Pan-Fried Fish - cooking recipe
Ingredients

fish fillets or small fish
4 Tbsp. cooking oil
cornmeal
4 Tbsp. butter or margarine
1 lemon
Preparation

Salt and pepper the fish and dredge them in cornmeal or a cornmeal-flour mixture.
Heat the cooking oil until hot.
Place fish in the pan and turn the heat down.
Brown the fish and prevent them from sticking to the pan with a spatula (takes about 8 to 10 minutes on each side; do not overcook).
When the fish are done, remove them and add the butter or margarine to the skillet. Squeeze lemon juice into the fat, stir and sprinkle this over the fish before serving.
