Vegetable Soup(Makes 2 Servings) - cooking recipe
Ingredients

1/4 c. diced onions
2 pkg. instant chicken broth
2 garlic cloves
1 1/2 c. thinly sliced zucchini
1 tsp. chopped fresh parsley
1/4 tsp. basil leaves
1/8 tsp. pepper
1/2 c. each: thinly sliced carrots and chopped seeded tomato
Preparation

In 1 1/2-quart nonstick saucepan, combine onions, broth mix and garlic.
Cook, stirring occasionally, until onions are translucent. Add remaining ingredients and stir to combine.
Cover and cook over low heat, stirring occasionally, for about 10 minutes.
Add 2 cups water and bring to a boil.
Reduce heat to medium, cover and cook until vegetables are soft, about 20 minutes.
Using a slotted spoon, remove about 1/2 cup vegetables from saucepan.
Set aside. In blender, puree remaining soup.
Return puree to saucepan.
Add vegetables and heat.
