Stir-Fried Spinach - cooking recipe

Ingredients
    1 lb. fresh spinach
    1/4 c. peanut oil
    1 clove garlic, minced
    1/2 tsp. salt
    1/4 tsp. sugar
    dash of pepper
    1 tsp. sesame oil (optional)
Preparation
    Wash spinach; discard stems and bruised area of leaves. Drain. Add oil to wok, pouring it around sides.
    Preheat oven to
    325\u00b0 for
    about 2 minutes.
    Add spinach and garlic;
    toss lightly
    to coat
    spinach
    leaves with oil, about 30 seconds. Cover;
    cook
    1 minute.
    Remove
    cover; stir-fry additional 1 minute.
    Leaves should
    be dark green and glisten.
    Add salt, sugar, pepper and sesame oil.
    Stir to blend about 30 seconds. Makes 3 to 4 servings.
    My children's favorite in late spring.
