Squash Souffle - cooking recipe

Ingredients
    4 lb. yellow squash
    1 large onion
    1/2 lb. butter
    1 c. evaporated milk
    3/4 lb. Cheddar cheese
    18 saltines
    1/4 tsp. oregano
    1/4 tsp. curry
    1/2 tsp. Beau Monde
    1 tsp. sugar
    salt and pepper to taste
    4 well-beaten eggs
Preparation
    Cook squash and onion until tender in salted water.
    Mash and add all other ingredients except 4 crackers and small amount of butter.
    Put 4 crackers, broken into crumbs and buttered, on top. Add paprika, Parmesan cheese and fresh parsley on top.
    Bake at 350\u00b0 for 30 minutes.
    Serves 18.
