Brazilian Rice And Beans - cooking recipe
Ingredients

2 c. pinto or kidney beans
6 c. water
4 c. of 2 to 4 of the following vegetables: chayote, cabbage, potato, pumpkin, okra or carrot
1/2 lb. ground meat (beef or pork)
1/4 lb. smoked meat (bacon, sausage, etc.)
2 garlic cloves, minced
1 medium onion, chopped
1/2 green pepper, chopped (optional)
1 tsp. Worcestershire sauce
2 Tbsp. tomato paste
1 tsp. coriander
1 bay leaf
salt and pepper to taste

Preparation

Soak beans in water overnight or by quick method.
Cook about 2 hours or until tender.
In saucepan, cook together the vegetables.
Saute remaining ingredients (except rice) together in a skillet.
Simmer 30 minutes.
Join beans, vegetables and meat mixture and heat together two minutes.
Serve with rice.
Serves 8 to 10.
