Cashew Crunch - cooking recipe

Ingredients
    1 c. granulated sugar
    1/2 c. light or dark corn syrup
    1 c. cashews (halves)
    1 tsp. butter
    1 tsp. vanilla
    1 tsp. baking soda
Preparation
    Line a cookie sheet with foil.
    Lightly grease foil.
    Have a greased spatula ready.
    Mix sugar and corn syrup in 1 1/2 to 2-quart glass measure.
    Microwave on High for 4 to 5 minutes, until sugar dissolves and mixture is bubbling.
    Stir in cashews; microwave 3 to 5 minutes more, until mixture is a medium golden color.
    Stir in butter and vanilla until butter melts.
    Add baking soda, stirring thoroughly, until mixture is foamy.
    Immediately pour onto prepared cookie sheet.
    Spread with greased spatula to 1/4-inch thickness.
    Let stand 1 hour.
    Peel off candy and break in chunks.
    Makes 1 pound.
