Italian Style Rice Casserole - cooking recipe

Ingredients
    3 c. chicken broth
    1 1/2 c. rice (brown or white)
    1 1/2 c. diced cooked ham, shrimp, crab meat
    1 1/2 c. sliced fresh mushrooms
    3 to 6 green onions, thinly sliced
    1/4 c. grated Parmesan or Romano cheese (optional)
    1 c. cooked peas
    1 tsp. salt
    1/3 c. margarine
    1/4 c. pimento, chopped
    2/3 c. California wine (white)
Preparation
    Heat broth and salt to boiling.
    Stir in rice; cover and cook for 20 minutes, or until rice is tender and liquid is absorbed. Meanwhile, saute ham, mushrooms and onions in oleo or corn oil or margarine.
    When rice is cooked, add all remaining ingredients and mix lightly with a fork.
    Heat a minute or two longer.
    Makes six servings.
