Parmesan Potato Casserole - cooking recipe
Ingredients

12 medium size potatoes (4 lb. all-purpose potatoes), peeled and quartered
1/2 c. butter or margarine
1 c. milk
3 large eggs, lightly beaten
1/2 c. grated Parmesan cheese
1 tsp. salt
1/4 c. chopped parsley
1/2 tsp. pepper
Preparation

Heat oven to 350\u00b0.
Lightly grease shallow 3-quart baking dish.
Cook potatoes in water to cover for 15 to 20 minutes, until tender.
Drain well.
Add butter to potatoes and mash until butter melts.
Add milk, eggs, cheese, parsley, salt and pepper.
Mash until smooth.
Spoon into prepared dish.
(Can be made ahead to this point and refrigerated; bring to room temperature before baking.) Bake, uncovered, 45 to 50 minutes, until puffed and golden.
Makes 10 cups or 12 servings.
