Split Pea Casserole - cooking recipe

Ingredients
    1 c. split peas
    1/2 tsp. salt
    1/4 tsp. pepper
    12 oz. tomato juice
    2 cloves garlic, minced
    1 c. chopped cabbage
    1/2 c. chopped carrots
    1/2 c. diced potato
Preparation
    Cook peas in 8 cups water.
    Bring to boil.
    Turn off and cover.
    Let sit 1 hour.
    Drain.
    Add 2 1/2 cups water, salt, pepper, tomato juice and garlic.
    Bring to boil.
    Reduce heat and simmer 1 hour.
    Now add cabbage, carrots and potato.
    Simmer covered 30 minutes or until vegetables are tender.
    Very low fat!
