Ingredients

1/2 c. shredded coconut
1 c. panko (Japanese breading)
fresh prawns
seasoned flour
1/2 c. buttermilk
oil (for deep frying)
Preparation

Combine coconut and panko. De-vein and butterfly prawns leaving tails on. Roll in flour then dip in buttermilk. Roll in panko mix until well coated. Deep fry until golden brown.
